Bai Mudan (literally ‘white peony’) is one of the great classics among China’s white teas. This refined tea originates in Fujian province, where the art of white tea making has been cherished for generations. Its poetic name refers to the elegant interplay of silvery leaf buds and young green leaves, which unfold gracefully during the infusion.

For Bai Mudan, only young, finely hairy buds containing the first one or two leaves are picked. Subsequently, the tea is processed with remarkable restraint. The fresh leaves are allowed to wilt slowly and are then carefully dried, without the rolling and intense heating characteristic of many other tea varieties. It is precisely this minimal processing that allows the natural finesse and aromatic richness of the young tea leaf to come fully into their own.

In the cup, Bai Mudan displays a clear, soft golden-yellow infusion and a delicate floral bouquet. The taste is silky smooth and refined, with nuances of white blossom and ripe fruit, followed by a subtle honeyed sweetness and a fresh, almost dewy touch. Light and elegant, yet at the same time surprisingly layered – a white tea whose beauty lies precisely in its subtlety.
